Today I want to share with you this super simple and delicious recipe for chickpeas. These are completely gluten free and vegan, packed with protein and iron! It is simply the best roasted chickpeas recipe!
One can of organic canned chickpeas, drained and rinse (rinsing helps get the “can” taste out)
Extra Virgin olive oil (enough to toss and lightly cover chickpeas)
Mediterranean salt mix or Fleur de sel ( a generous coating per taste)
Simply preheat oven at 425 degrees and place coated chickpeas on parchment paper lined cookie sheet, preferably one with edges like a jelly roll sheet pan.
Bake for approximately 15-17 minutes until golden brown and crispy. Yum!
These were so delicious with the simple olive oil and fleur de sel that I made an additional batch exactly the same but I substituted the fleur de sel for kosher salt and curry powder (season to taste).
