This week I took my boys to a local farmer’s market in search of the perfect Christmas tree and stumbled upon some great produce. I let the little ones pick whatever veggies we would purchase and prepare and among the basket we ended up with ripe avocados, heirloom tomatoes, limes, and green onions. So what I came up with was the best fresh guacamole recipe that is gluten free and vegan.
This recipe is super simple and so delicious! Here is a list of everything that you will need.
3 very ripe haas avocados, mashed until chunky
One green onion, finely chopped
One small tomato, cut into small cubes
One tablespoon extra virgin olive oil
the juice of 1/2 a large lime or lemon
Salt to taste
Half the avocados, remove pit and mash the avocado until it’s chunky, using a spoon mix in the chopped green onion, small tomato cubes, reserve a few tablespoons for garnish, lime juice, olive oil and salt until combined. Garnish with tomato and cilantro if desired. Serve with warm tortilla chips.
