Winter time is the perfect weather for a hot bowl of soup, don’t you think? Not only is it packed with healthy vegetables but there’s also something very soothing about having a piping hot bowl of something to eat. Anytime one of my boys or I get sick I know what I will be making for dinner that night, my best homemade chicken soup!
This recipe makes a lot so feel free to half it if your family won’t want to eat soup for more than one meal. You can always share with friends. I made this soup last night and shared it with at least two soup loving friends! Here is all there is to it!
Ingredients: One whole organic chicken, cut into pieces
The leaves of one entire stalk of celery (chopped)
5 large organic carrots cut chopped into big pieces
1 medium onion finely chopped
6 garlic cloves finely chopped
1 bunch kale leaves removed from the stem and chopped
5 small organic potatoes peeled and cubed
1 medium yucca peeled and cubed
2 tablespoons olive oil
48 oz gluten free chicken broth or stock
6 cups of water
Sea Salt or Mediterranean sea salt to taste
3 large bay leaves
Season chicken pieces generously with the Mediterranean sea salt. Pour olive oil in a large soup pot or dutch oven and turn on medium high heat.
Brown the chicken in the olive oil
Next add the onion, garlic, celery and sautee until soft
Add the 48 oz of gluten free chicken broth and the 6 cups of water, bring to a boil
Add the rest of the vegetables: kale, yucca, carrots and potatoes
Add salt and seasoning to taste
Add dry bay leaves.
Once everything is in the pot let it all continue to remain in a medium-low boil for about 25-30 minutes.
Test the potatoes and yucca for doneness, all of the other vegetables will cook much faster and the chicken will be thoroughly cooked by then as well. Check the soup for salt and add seasoning as desired.
This soup is rich and delicious, the yucca and the kale thicken the soup perfectly. It will warm you up in even the coldest nights and will fix whatever ails you, believe me. I like to add a few generous squeezes of fresh lime juice to mine, especially when I’m fighting a cold!
