When I was asked by Fresh from Florida to try one of their shrimp recipes and share it with you I was super excited! I love shrimp and especially love to buy local produce, meats and seafood whenever possible. What’s even more exciting about this recipe for me personally is that it’s completely gluten and dairy free as well! Hope you love it as much as I do! This yummy rock shrimp salad using Fresh Florida Shrimp is super simple to make and so delicious too!
1 pound rock shrimp, cooked, peeled and deveined (can substitute regular shrimp if needed)
1 15 ounce can black beans, rinsed and drained
1 8 3/4 ounce can whole kernel corn, drained
1/2 cup red bell pepper, chopped
1/2 celery, chopped
1/4 red onion, chopped
1/4 cup cilantro, chopped
3 tablespoons green onions, chopped
1 jalapeno pepper, seeded and finely chopped
1/4 teaspoon cumin
iceberg lettuce, shredded (optional)
1 avocado sliced
1 cup vinaigrette dressing (recipe below)
1/2 cup olive oil
6 tablespoons red wine vinegar
6 tablespoons lime juice
2 teaspoons dijon mustard
2 teaspoons honey
2 teaspoons Italian seasoning
1/2 teaspoon salt
1/2 teaspoon pepper
In a medium bowl, combine all ingredients except the avocado slices, lettuce and dressing.
Pour 1/2 cup of vinaigrette dressing over mixture and refrigerate for one hour.
Serve on shredded lettuce garnished with avocado slices. Serve with additional red wine vinaigrette. Can be served on lettuce or taco shell.
We are so lucky to have access to so much fresh shrimp living here in Florida. I went to a locally owned shop 5 minutes from my house Land and Sea Market, to buy this Fresh From Florida shrimp.
